A Signature Taste of Quebec
Canada’s Quebec is known for maple products and some of the country’s best are produced by Brien Fine Maple Products.
Since 1975, Brien has produced 100% natural (some are also organic), all maple products, including maple syrup, maple sugar, maple candies, butter, jelly, and salad dressings.
All of us are familiar with maple syrup and, of course, Brien, produces top-quality syrup. However, RFT editors were intrigued by some of Brien’s more unique products, including their Maple Sugar, both the finely granulated and small chips and their Maple Dressing and Maple and Mustard Dressing.
Maple sugar. In the U.S., maple sugar is largely unknown and it’s a shame because it has a lot more flavor than white sugar. It’s not inexpensive, but it’s the last step in boiling down maple water (the water/sap combination that creates maple syrup), a labor-intensive process.
Brien’s Granulated Maple Sugar is a fine sugar with a light maple flavor that instantly melts on the tongue. This sugar can be used anywhere white sugar is used and it makes a great addition to black tea or to morning oatmeal. Brien’s coarser maple sugar comes in small chips in a shaker bottle and it’s one of our favorites. Because of the larger grind, the maple flavor is more pronounced.
RFT editors have sampled other coarse grind maple sugars and Brien’s is far superior to any we’ve tried. We particularly love Brien maple sugar chips on warm butter toast or bagels.
Maple dressing. Brien’s maple salad dressings, which can also be used as marinades for meats, poultry, or fish, are lush looking products. The Maple Dressing, which we served over a spinach salad, has a lovely soft maple sweetness. The Maple and Mustard Dressing has a more piquant flavor that’s a nice counterpoint to fresh salad greens or even vegetables.
Real Bottom line: If you’re a fan of maple, you can’t get better maple products than Brien Maple Products. They take pride in creating 100% natural maple products that are wonderfully fresh tasting.
