Avocados are delicious and good for you!
Avocados, those creamy fruits used in guacamole, have gotten a bad rap for being a high-fat food. However, recent research shows that while avocados are, in fact, nearly 85% of its calories come from fat, it’s loaded with healthy fat. Avocados have been shown both to reduce inflammation (associated with everything from cancer to heart disease). Avocado consumption is also associated with lower rates of heart disease, so enjoy these delicious fruits.
Yield 4 cups
1 fully-ripened avocado, halved, pitted, peeled, and diced
1 20-ounce canned pineapple chunks in juice (or substitute fresh pineapple)
2 cups ice
In blender container, combine avocado, pineapple plus its juice and ice; whirl until smooth. If needed, add a small amount of honey or sugar to sweeten.
