Easy, no bake creamy chocolate pie recipe just for you!

Sometimes you just need a drop-dead simple dessert and this Chocolate Mascarpone Pie recipe from Crave Brothers Farmstead Classics fits the bill. This pie is great if you’re short on time, aren’t a big fan of cooking/baking, or you need a simple dessert for Valentine’s Day or other occasion.

In fact, if you want it to be even easier, you can buy a pre-made Oreo Cookie crust and avoid baking. This recipe features mascarpone cheese, in this case, ultra-creamy Crave Brothers Farmstead Classics Mascarpone. The cheese gives this easy-does-it pie a rich, silkiness that offsets the sweetness of the chocolate.

Tester’s note: Be sure the mascarpone is room temperature to ensure it’s easy to blend in the melted chocolate. If it’s too cold, it’ll be difficult to blend and will cause pieces of the melted chocolate to harden.

Serves 8

For chocolate crumb crust

1 cup chocolate wafer cookie crumbs
3 TBS. sugar
¼ cup butter, melted, plus more for the pan

Filling
16 ounces mascarpone cheese, room temperature (** See tester’s note)
6 oz. semi-sweet chocolate chips, melted
2 Tbs. Kahlua or Amaretto

 

For the Crust: Preheat oven to 325 degrees. Butter a 9-inch pan. Stir cookie crumbs, sugar, and melted butter together. Press crumbs evenly in the pan. Bake six minutes. Set aside to cool. (You can skip this step by purchasing a pre-made Oreo Cookie crust.)

For the Filling: In a large bowl and using a large spoon, stir mascarpone and melted chocolate together until no white streaks remain. Stir in Kahlua or Amaretto. Immediately spread the filling in the cooled crust. Cover and refrigerate for one hour. Served topped with whipped cream.
