Super-easy, no-bake chocolate mascarpone pie kit.

Not a baker? No worries because Wisconsin cheese experts, Crave Brothers Farmstead Cheese Company, will send you everything you need to make a rich, creamy Chocolate Mascarpone Pie. And you don’t even have to turn on your oven!

When we heard about Crave Brother’s pie kit, we just had to try it. The kit arrived via UPS overnight in a large cardboard box with the words “refrigerate immediately” on it. Since it was 25 degrees out, we didn’t have to worry too much about refrigerating the box. It was plenty cold.

Inside the box there was a large plastic insulated sack and two frozen cool packs to keep the kit cool during transport. In the shipping box was a 12-ounce bag of Hershey’s Dark Chocolate Chips, a chocolate Oreo cookie crust, and 16 ounces of Crave Brothers Farmstead Classics Mascarpone Cheese. There was also a recipe for making the pie (and the crust from actual chocolate wafer crumbs). The only thing I needed to add was a couple of tablespoons of Kahlua or Amaretto.

The pie filling involves just mixing melted chocolate, mascarpone cheese, and liqueur together. Easy!

If you order the pie kit, give the mascarpone some time to come to room temperature. I was too excited to wait and, after melting half the bag of chocolate chips, tried to mix the warm chocolate and coldish mascarpone. Not a good combination. The stiffness of the mascarpone made the blending tough going and caused some of my melted chocolate to unmelt, leaving little bits of chocolate throughout the mixture. I eventually resorted to using my mixer, which made it a bit easier. Then I added two tablespoons of Amaretto and stirred it in.

I put the filling into the provided Oreo cookie crumb pie shell, popped it in the refrigerator for an hour, and topped it with whipped cream. Totally easy; super quick.

Because I didn’t let my mascarpone come to room temperature like the recipe said, my melted chocolate chips unmelted and put little bits of chocolate into the mixture.

And how’d it taste? Creamy, rich, chocolately with the mascarpone providing a lovely accent that softened the sweet chocolate. My guests loved it and certainly thought I’d labored much longer than the few minutes it took to put this pie together.
