On the Rocky Mountaineer, a luxury train that travels through British Columbia and Alberta, they serve some wonderful entrees and desserts. One of my favorites incorporated their delicious and creamy caramel rum sauce.
This silky, buttery sauce is delicious on ice cream, over bread pudding, or, just about anything (I have trouble keeping myself from just dipping a spoon in and eating it!).

1 cup sugar
2 Tablespoon honey
1 cup water
½ cup of whipping cream
1 table spoon of aged dark rum
Bring the sugar, honey, and water to a boil and reduce to a thicker consistency.
Cool off and add ½ cup of whipping cream and 1 table spoon of aged dark rum.
Let rest overnight and serve cold or warm.
