BBQ Bacon Cheeseburger on Pretzel Bun Recipe

BBQ BurgerWant to know the secret to making a really a great burger? You know, those burgers you’re willing to shell out $10, $15 or more for?

Executive Chef Daniel Gerety’s BBQ Burger on a Pretzel Bun is one of Fort Launderdale Marriott Pompano Beach Resort & Spa’s customer favorites. Gerety says his secrets include using really good ground meat, Applewood bacon, tangy aged cheddar, and fresh pretzel buns, which have just the right “tooth” and won’t get soggy.

(Editor’s Note: If you can’t find prime beef, ask your butcher for the best beef you can buy. Make sure it’s got about 20% fat, which gives flavor and makes the burger juicy.)

Makes 1 burger

1 eight ounce prime beef burger

2 tablespoons sweet and tangy bbq sauce

1 pretzel bun

2 ounces fried onions

2 slices aged cheddar

2 pieces apple wood bacon

Salt and pepper to taste
1. Grill burger and bacon until cooked. (Don’t overcook. Burgers are juiciest when cooked to just medium–slightly pink inside.)

2. Smother BBQ sauce on pretzel bun.

3. Stack bacon, aged cheddar and fried onions on burger.

4. Add salt and pepper to taste
