Red Velvet Molten CakeIt’s nearly Valentine’s Day and what better way to show your affection for your loved one than with a deep, rich warm chocolate cake? Executive Pastry Chef Brittani Szczecina of Florida’s Palm Beach Marriott Singer Island Beach Resort & Spa offers us her classic chocolate dessert, with the molten center reinterpreted perfectly in Valentine’s red. It will melt your sweetheart’s heart.

Makes 4 servings

• 2 eggs

• 1 egg yolk

• 1/4 cup sugar

• 1/4 cup semisweet chocolate, melted

• 1/8 cup bread flour, sifted

• 1/4 cup butter, melted

• 4 tbsp. red food coloring

Preheat oven 350 degrees F. Spray 4 4-0unce tins on all sides.

Using a stand mixer (or hand mixer), whisk eggs, yolks and sugar on medium speed until they begin to form ribbons.

In a pan or a bowl in the microwave, melt butter and chocolate together.

Pour the chocolate mixture into the ribbon eggs and pulse a few times.

Add in the sifted flour and pulse a few times again.

Finish folding by hand and add the red coloring.

Portion batter into tins, filling each tin ¾.

Bake at 350 degrees F for 8-10 minutes. Rotate tins halfway through the bake. Do not over bake. Serve warm.
