Something kept showing up on menus of the restaurants we ate at in Columbia, Missouri – gravy. We saw it over meat, potatoes and biscuits, not surprisingly. But we also saw it used on a breakfast pizza as the base (instead of tomato sauce) and other creative ways. In the ongoing Real Food Traveler quest to provide authentic recipes to our readers and podcast listeners, we asked for a recipe and Ozark Mountain Biscuit Company was kind enough to share theirs. We kept seeing their big food truck around town but they also have a brick and mortar Ozark Mountain Biscuit & Bar location as well. They serve their mushroom gravy over their own buttermilk biscuits, over chicken fried steak and draping fries topped with melted cheese! Give their gravy a try when you visit Columbia, MO.

Mushroom Gravy Recipe from Columbia, MO

Makes 3 quarts
Ingredients:
1 TBS oil
½ cup diced white onion
2 minced garlic cloves
2 ½ sticks unsalted butter
2 cups All Purpose flour
½ gallon whole milk
2 TBS course ground black pepper
2 TBS kosher salt
1 ½ cups diced mushrooms (different types can be used)
Directions:
Saute onions in oil until translucent, do not allow them to caramelize.
Add garlic, mushrooms and saute for a couple of minutes longer.
Add butter to pan and continue simmering until melted.
Whisk flour into butter to form a roux.
Cook, stirring constantly for 2 minutes.
Whisk milk into roux to fully incorporate, cook on medium heat at a simmer, stirring constantly until mixture begins to thicken into a gravy.
Remove from heat, add water to thin to desired consistency.
