Cucumber-Avocado Gazpacho Recipe

Of course, if you’ve got veggie broth in your freezer, you can also use that (in place of the spices and water). This recipe for cuke-gazpacho featuring crisp cucumbers and creamy avocadoes is refreshing and just right for spring.

Serves 2

2 cucumbers

1 avocado, peeled

2 tablespoon olive oil

2 tablespoon lemon juice

1 tablespoon apple cider vinegar

1 cup water

2 teaspoon Just Spices Vegetable Broth Seasoning

  1. Cut all ingredients into small pieces and combine everything in a blender.
  2. Add the Vegetable Broth Seasoning and blend until smooth.
  3. Garnish with thin cucumber slices or chopped chili.
