1. Whisk or lightly beat the milk, egg, olive oil, lemon juice, and zest in a bowl. Add the flower, sugar, cinnamon, baking powder, and salt.
2. Pour oil in a deep fryer or frying pan to at least 2 inches. Heat over medium heat until a dop of battle sizzles and browns (about 350 degrees)
3. Dunk apple slices in batter to thoroughly coat. Shake off drippy bits and gently lower into oil. Cook until brown on side (3 to 5 minutes), then turn gently and cook until reverse side is brown.
4. Carefully remove each fritter and let drain on paper towels. Sprinkle with a mixture of powdered sugar and cinnamon and eat immediately!
