Gluten Free Hummus

Yield 2 cups
Ingredients:
1½ cups cooked chickpeas (cooked garbanzo beans) or 1 can (15½ oz) chickpeas, drained well and rinsed
¼ cup water (½ cup if you like a runny consistency)
2½ TBS freshly squeezed lemon juice
2 TBS tahini (sesame paste)
2 TBS extra-virgin olive oil
1 small garlic clove
1 TBS dried parsley leaves
1 tsp kosher salt
¼ tsp ground cumin
Method:
1. Place all ingredients in the bowl of a food processor with a metal “S” blade attachment.
2. Blend until almost smooth.
Tip: For that special touch, top with 2 tsp extra-virgin olive oil, pine nuts, and a sprinkle of paprika.
