Our Florida correspondent, Deb Lander, traveled to the Augusta National Golf Club in Georgia to watch the famous Masters Tournament (you know, the one with the green jackets for winners). She found the food a retro throwback to the 1950s and 60s with egg salad and pimento cheese sandwiches.
Here’s the original Four-Cheese Pimento Sandwich recipe courtesy of Par 3, Tea-Time at The Masters.
Pimento Cheese Sandwich Recipe Using Four Cheeses
Deb says for a sandwich more like the one she was served at the Masters, omit the blue cheese and the Parmesan cheese. You can also use this spread as a topping for crackers, burgers, to make grilled cheese, and to mix in with eggs.
Ingredients:
3 cups (12 oz.) shredded white Cheddar Cheese
2 cups (8 oz.) shredded yellow Sharp Cheddar Cheese
1 cup Parmesan cheese
4 oz. crumbled blue cheese
1 4 oz. jar sliced pimentos
1 cup light mayonnaise
2 TBS Dijon mustard
Party-size loaf white bread or bread cut in slices
Method:
Combine the white Cheddar cheese, yellow Cheddar cheese, Parmesan cheese, blue cheese, pimentos, mayonnaise and Dijon mustard in a food processor and process until smooth. Remove to a bowl.
Cover and chill. Spread on bread to make sandwiches.
