Peanut Butter Pie Recipe


At nearly every restaurant we visited in the Brunswick Islands in North Carolina, Peanut Butter Pie was on the menu in some variation or another. It made me recall the version my mother made when I was growing up. Here, in honor of our time in Brunswick Islands, and all of the delicious foods we had, I share the recipe.

Peanut Butter Pie Recipe

Inspired by Brunswick Islands, NC

Makes 1-9” pie

Ingredients:
1 9” graham cracker or chocolate pie crust (made from scratch or premade)
4 oz cream cheese, softened
1 cup confectioner’s sugar
1/3 cup creamy peanut butter (use a brand that is 100% peanuts + salt with no palm oil for more flavor and better health)
½ cup milk
1 9-ounce container of Cool Whip Topping (or homemade whipped cream)

Directions:
Whip the cream cheese until it is fluffy.
Beat in the confectioner’s sugar and peanut butter.
Slowly add in the milk
Finally, fold in the whipped topping.
Pour the filling into the pie shell, then, if desired, sprinkle finely chopped peanuts on top or drizzle with chocolate ganache.
Wrap the pie and refrigerate it until ready to serve. Or, freeze until needed but defrost enough to be able to cut the pie.
