Snug Hollow Braided Rosemary Bread Recipe

This bread is served almost daily to guests at Snug Hollow Farm B&B in Irvine, Kentucky. Special thanks to Will Dawson for providing it.

Makes a large 3 load batch

Ingredients:
1/2 cup wheat flour
1 1/2 cup bread flour (plus a separate 3-4 more cups for later)
3 TBS spoons instant yeast (Red Star brand is recommended)
1 TBS spoon salt
2 TBS spoons sugar
1/3 cup olive oil
1.5 cups warm water

Instructions:
Mix all ingredients together and let bloom in a warm spot for 30 min.

Preheat oven to 400 degrees.

Once the mixture is bloomed and bubbly, add in 3-4 more cups of bread flour until it is combined. Pour dough onto a floured surface and knead until it’s not sticky (add more flour if you need).

Cut the dough into three even chunks. Then, one at a time, divide each chunk of dough into three even sections. Hand-roll them out into long pieces and braid the three pieces of dough together.

Repeat this process with the other two chunks of dough.

After forming the three braided loaves, place all three on a baking sheet, spaced apart. Brush egg wash on top of each and bake for 15-20 min. Note: when Will has let the loaves rise before putting them in the oven, he says the bread does get super fluffy but the braid sometimes splits in the middle and loses some of the detail.

Mix 1/4 cup olive oil, rosemary and rubbed sage and pour over bread right out of the oven. Will sometimes pops it back in the oven to toast the herbs.

Serve right away.
