Better Butter Coffee
Perhaps you’ve heard that butter coffee is a thing now. Unless you’ve been living under a rock – in which case, consider this your notice. Yes, early birds across the globe have taken to plopping creamy pats of butter into their morning joe, and while this may initially sound crazy, when you consider the benefits – increased energy, sharper focus, satiated appetite, fuel for fat-burning – it’s actually crazy awesome.
Ingredients:
8-12 oz brewed coffee
1 TBS Vital Farms Pasture-Raised Butter
1 TBS MCT oil (available on Amazon.com)

How to Make the Best Over Easy Eggs
Ah, the delight in cooking eggs over easy and breaking open the yolk to reveal the dark, nutritious splendor. There a few tricks in achieving this glorious feat and it starts with low heat. Most people expect the snap, crackle and pop of oil as the egg enters the pan but there’s no reason to burn these bad boys. Simply set the heat on low and allow the egg to cook until the whites become opaque. Be brave! Jiggle the eggs to make sure they’re loose from the pan and flip away. Fine, if you’re nervous, use a spatula. Let the eggs sit for just a few moments and transfer to your plate. If you’re interested in eggs over medium, let the eggs sit for an extra 20 seconds.
Ingredients:
2 eggs
Canola oil spray (Personally, I love cooking eggs in olive oil for delicious flavor)

My attempt at an over easy egg over hashbrowns. It didn’t come out looking Insta-worthy but it sure was yummy!
Baked Egg in Avocado
Ingredients:
1 large avocado
2 large Vital Farms Pasture-Raised eggs
Salt & pepper to taste
Red chili flakes (optional)
Instructions:
Preheat oven to 425 F.
Slice avocado in half and remove pit.
Scoop out extra avocado flesh to make a reservoir for egg yolk and white.
Crack open egg and gently separate the yolk from the egg white. Reserve white in a small cup and set aside.
Gently drop yolk into the scooped out portion of the avocado and season with salt & pepper.
Pour reserved egg white around the yolk, filling the reservoir.
Season egg white with salt, pepper, and chili flake.
Place avocado on baking sheet and bake in oven for 20 minutes, until whites are set. (For runnier yolks bake for 15 minutes).
