Moroccan Salmon Recipe
from Hilton Head Health
Hilton Head Health note: Any seafood could be substituted including mahi mahi or grouper.
Serves 2
Ingredients:
Two salmon filets, one four-ounce serving per person
½ tsp cinnamon
½ tsp cumin
¼ tsp salt
¾ tsp light brown sugar
Pinch of cayenne
½ tsp olive oil
Instructions:
Preheat oven to 375 degrees F.
Mix all dry spices.
Lay fish, skin side down, on a clean, dry surface and sprinkle the spice mixture over each piece of fish to lightly cover the surface.
Preheat an oven-proof sauté pan on high heat. When the pan is hot, add the ½ tsp of oil.
Place salmon seasoned side down on the preheated pan and sear for 30 seconds.
Flip the salmon and place the pan in the oven and roast for 7-12 minutes or until the internal temperature reaches 140 degrees F.
Let the fish rest for a minute or two and serve warm.
